Regarding the character ranges available in the 'Character Embedding'; dialog, in flash MX at least, the extended ranges embedded by flash do not match the official unicode ranges of the same name. The characters that are actually embedded for each range are defined in the 'UnicodeTable.xml' (on windows -C:\Program Files\Macromedia\Flash 8\en\First Run\FontEmbedding\UnicodeTable.xml). By editing that xml you can create custom sets to embed.
